THUNDERSTRUCK BIRRIA BURRITOS

Slow-Braised Beef or Pork | Creamy Queso | Fresh Pico | Thunder in Paradise

Brought to you by The Flaming Dragon — Family-Made, One Batch at a Time.

Rich, smoky, juicy, cheesy, and just a little dangerous.

We're taking tender, slow-braised birria-style beef or pork, wrapping it in a golden, pan-seared burrito, then absolutely smothering it in warm queso, fresh pico de gallo, and our best-selling Thunder in Paradise Habanero Garlic Hot Sauce.

This isn't a burrito you eat while driving. You're going to need a plate, a fork, and possibly a change of clothes.

Servings: 6 large burritos

Prep Time: 30 minutes

Cook Time: 3–4 hours (beef) or 3–3½ hours (pork)

Heat Level: Medium, adjustable with Thunder in Paradise

Ingredients

For the Birria-Style Beef or Pork

3 lbs beef chuck roast or boneless pork shoulder

3 dried guajillo chiles, stems and seeds removed

2 dried ancho chiles, stems and seeds removed

1–2 dried árbol chiles (optional, for extra heat)

1 medium white onion, quartered

5 cloves garlic

2 Roma tomatoes, quartered

2 cups beef broth (or chicken broth for pork)

2 tbsp apple cider vinegar

1 tbsp Mexican oregano

2 tsp ground cumin

1 tsp smoked paprika

½ tsp ground cinnamon

¼ tsp ground cloves

2 bay leaves

1½ tsp kosher salt, plus more to taste

1 tsp black pepper

2 tbsp neutral cooking oil

For the Queso

1 tbsp butter

1 tbsp all-purpose flour

1 cup whole milk

8 oz white American cheese, shredded or cubed

4 oz pepper jack cheese, shredded

1 small can (4 oz) diced green chiles, drained

1–2 tbsp Thunder in Paradise Habanero Garlic Hot Sauce

For the Fresh Pico de Gallo

3 Roma tomatoes, diced

½ small white onion, finely diced

1 jalapeño, seeded and minced

¼ cup fresh cilantro, chopped

Juice of 1 lime

Salt to taste

For Assembly

6 large flour tortillas (burrito size)

2 cups cooked Mexican rice

1½ cups shredded Monterey Jack cheese

½ cup reserved birria cooking liquid, for dipping and crisping

Additional Thunder in Paradise Hot Sauce

Fresh cilantro and lime wedges for garnish

Instructions

1. Build the Birria Flavor

Toast the dried chiles in a dry skillet over medium heat for about 20–30 seconds per side, just until fragrant. Don't burn them!

Transfer to a bowl, cover with hot water, and soak for 15 minutes until softened.

Add the softened chiles, onion, garlic, tomatoes, vinegar, oregano, cumin, smoked paprika, cinnamon, cloves, and 1 cup of broth to a blender.

Blend until completely smooth.

2. Sear the Meat

Cut the beef or pork into large chunks and season generously with salt and pepper.

Heat oil in a large Dutch oven over medium-high heat. Sear the meat on all sides until nicely browned.

Pour the blended chile sauce over the meat. Add the remaining broth and bay leaves.

Bring to a gentle simmer, cover, and cook in a 300°F oven until fork-tender, approximately 3–4 hours for beef or 3–3½ hours for pork. Check periodically and add a splash of broth if needed.

3. Shred That Beautiful Meat

Remove the meat and shred it with two forks.

Skim excess fat from the braising liquid and reserve about ½ cup for crisping the burritos. Toss the shredded meat with enough of the remaining liquid to keep it juicy without making it soupy.

Taste and adjust seasoning.

4. Make the Thunder Queso

Melt butter in a saucepan over medium-low heat. Whisk in flour and cook for about 1 minute.

Slowly whisk in milk and cook until slightly thickened.

Reduce heat to low. Add white American cheese a handful at a time, stirring until melted. Add pepper jack and green chiles.

Finish with 1–2 tablespoons of Thunder in Paradise.

Stir until smooth and creamy. Add a splash of milk if needed to keep it pourable.

5. Mix the Pico

Combine diced tomatoes, onion, jalapeño, cilantro, lime juice, and salt.

Refrigerate until ready to serve.

The freshness of the pico balances the rich, smoky meat and creamy queso.

6. Build the Burritos

Warm the tortillas until pliable.

In the center of each tortilla, layer:

A scoop of Mexican rice

A generous portion of shredded birria-style meat

A handful of Monterey Jack cheese

A spoonful of pico de gallo

A drizzle of Thunder in Paradise

Fold the sides inward and roll tightly.

7. Crisp Them Up!

Heat a large skillet over medium heat.

Lightly brush the outside of each burrito with reserved birria cooking liquid, using a little of the skimmed fat if desired.

Place seam-side down in the skillet and cook for 2–3 minutes per side until golden brown and crispy.

8. The Grand Finale

Place each burrito on a plate.

SMOTHER IT.

Ladle warm Thunder queso over the top. Add a generous scoop of fresh pico de gallo, a sprinkle of cilantro, and another glorious drizzle of Thunder in Paradise.

Serve with lime wedges and a little extra birria broth for dipping.

The Flaming Dragon Tip

Want to take things completely over the top?

Add a spoonful of Thunder in Paradise directly to the shredded meat before assembling the burritos. The habanero heat and garlic flavor cut through the richness of the slow-braised roast and make every bite better.
